If you’re in need of a chocolatey treat, you can’t go wrong with these peanut butter swirl brownies. They’re soft, chewy and sooooooo good. Not only are they delicious, they’re vegan and easy to make too!
When looking online, I struggled to find a vegan brownie recipe that was simple. Lots of recipes included black beans, dates or flax, but if I’m being honest you will very rarely find any of those things in my house. I decided to experiment a little using simple ingredients, so it was definitely a case of trial and error… The final result was worth it though!
Ingredients:
3/4 cup plain flour
1/3 cup cocoa powder
1 cup granulated sugar
1 tsp baking powder
pinch of cinammon
pinch of salt
2 tbsp desiccated coconut
1/2 cup of your preferred dairy free milk
1/4 cup vegetable oil
1 tsp vanilla extract
approx. 6 tablespoons natural peanut butter
Method:
Before starting, preheat your oven to 180C/355F. Make sure you grease and line your baking tin. I’d recommend using a metal 8×8 cake tin rather than a glass Pyrex dish – the brownies seem to bake better this way.
Sieve all the dry powdered ingredients into a mixing bowl and mix them together. Then add the desiccated coconut and all of the liquid ingredients. Don’t add the peanut butter yet though! Thoroughly mix the batter together before adding to your brownie tin. Drop spoons of peanut butter on top of the batter randomly. Using a knife, swirl the peanut butter around the batter. Be careful not to over mix or you will loose the nice swirly pattern (which I may be guilty of doing, oops).
Place the brownies in the oven for about 20-25 minutes. Make sure to keep an eye on them as everyone’s oven is different. Be careful not to overcook otherwise you’ll loose that gooey brownie goodness.
Once baked, take the brownies out of the oven and allow them to cool completely before cutting.
These brownies are egg free and dairy free, but they’re not lacking in flavour! Even if you’re not vegan, these brownies taste great and are super quick to make. I think I might double up on the recipe next time, because they disappeared way too fast in this house.
